2 cups vegetable broth1 cup quinoa, rinsed2 cups chopped fresh broccoli2 tablespoons butter1/4 cup chopped onion1/4 cup chopped green pepper1 cup shredded cheddar cheese, divided 1/2 teaspoon salt1/4 teaspoon pepper
Directions
In a large saucepan, bring broth to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes, adding broccoli during the last 5 minutes of cooking. Remove from heat; fluff with a fork. Meanwhile, in a small skillet, heat butter over medium-high heat. Add onion and green pepper; cook and stir until tender, 5-7 minutes. Stir in quinoa mixture, 1/2 cup cheese, salt and pepper. Sprinkle with remaining 1/2 cup cheese. Cover and let stand until cheese is melted.
