Ingredients

2 bone-in pork loin chops (1/2 to 3/4 inch thick)1/4 teaspoon salt1/4 teaspoon pepper2 tablespoons butter1/2 pound fresh or frozen rhubarb, chopped1 tablespoon honey1/8 teaspoon ground cinnamon1-1/2 teaspoons minced fresh parsley

Directions

Preheat air fryer to 400°. Sprinkle pork chops with salt and pepper. Place chops in greased air fryer. Cook until a thermometer reads 145°, 4-5 minutes on each side. Meanwhile, in a saucepan, melt butter over medium heat. Add rhubarb, honey and cinnamon; cook until rhubarb is tender, about 5 minutes. Serve sauce over pork chops. Sprinkle with parsley.
